The ingredients needed to prepare Everyone's Favorite Mapo Eggplant:
  1. Use 5 Eggplants (slim Japanese type)
  2. Get 200 grams Ground meat (beef, pork or a mix)
  3. Use 1 tbsp plus Doubanjiang
  4. Use 2 clove Garlic
  5. You need 1 the same amount as the garlic Ginger
  6. Take 2 stalks Japanese leeks
  7. You need 1 Vegetable oil
  8. Get 1 Sesame oil
  9. Use 2 tbsp Katakuriko
  10. Use 1 Sansho pepper or Sichuan pepper
  11. Use Mixed Seasoning Ingredients:
  12. You need 3 tbsp Tianmianjiang - Chinese sweet bean paste
  13. Get 2 tbsp Soy sauce
  14. Take 12 cup - 100 ml Japanese sake
  15. Provide 200 ml Chinese soup stock (using 1 12 tablespoons of chicken soup stock granules)
  16. Take 2 tsp Sugar
Steps to make Everyone's Favorite Mapo Eggplant:
  1. Make the ★ mixed seasoning ingredients. (Just combine them together.)
  2. Roughly chop the eggplants into pieces, and stir-fry in sesame oil, then transfer to a plate.
  3. Mince the garlic, ginger, and Japanese leek (12 stalk), and briefly stir-fry in a generous amount of oil.
  4. Add the doubanjiang and continue stir-frying (Very thoroughly!). If you don't have enough oil, add more.
  5. Add ground meat and continue stir-frying.
  6. Add all the mixed flavouring ingredients at once and bring to a boil.
  7. Add stir-fried eggplants and simmer for 2-3 minutes while stirring occasionally.
  8. Add sesame oil, and remaining chopped Japanese leeks, and briefly stir.
  9. Turn off the heat, and thicken the sauce with katakuriko dissolved in water.
  10. Serve onto a plate and it's done! Sprinkle sansho pepper or sichuan pepper to your liking.
