Steps to make Dal Makhani:
- Soak black urad dal and rajma for 8 to 10 hours. - Then whistle it for 8 to 10 times by adding water, a pinch of salt, soda and turmeric to it. - Heat oil, ghee and butter in the kadhai. - Then add cumin seeds and curry leaves to it. - Add a pinch of asafoetida.
- Then add onion and saute it till oil separates from it and onion becomes translucent. - Now add ginger garlic and chilli paste to it. - Saute it for a few seconds. - Now add tomato puree to it. - Add all the above-mentioned all ingredients to it except fresh cream, butter and coriander to it. - Add a splash of water to it.
- Stir it continuously till it becomes thick gravy and oil separates from it. - Now add boiled dal to it. - Mix it well. - Add 1 glass water to it and again mix it. - Now let it cook for 20 minutes on low to medium and medium to low flame. - Off the gas and add butter, fresh cream to it. - Mix it well and garnish it with coriander leaves. - Serve it with paratha, stem rice, or jeera rice.
